L-谷氨酰胺（L-Glutamine），CAS：56-85-9在中性或弱酸性沸腾溶液中，迅即转化为吡咯酮羧酸的铵盐。能溶于水，溶解度:35g/L水(20°C)，46µG/100ML乙醇(25°C)，3.5MG/100ML甲醇(27°C)，实际上不溶于甲醇、乙醇、醚、苯、丙酮、乙酸乙酯和氯仿，溶于无机酸。
